New small-scale sake bar opening in Troy

TROY, N.Y. (NEWS10) -- A new sake bar is set to open on Second Street in Troy. The owner, Vic Christopher, says he hopes to open the bar at the end of February, shortly after he returns from a trip to Tokyo, Japan.

The sake bar's name will be Daisuki, meaning "I love it" in Japanese, according to the owner. Christopher said the bar is going to be quite small with an occupancy of just 12 people and will be Tokyo-inspired.

The owner said he is working strictly with recycled materials in the bar, including vinyl records. Christopher's goal with this smaller-scale bar is to bring people together with an emphasis on the social experience.

Daisuki will likely be a late-night sake bar with the hours being 9 p.m. to 3 a.m. It will be open on Thursday, Friday, and Saturday to start.

Menu items include imported Japanese food and drink not available in the U.S. Food items include chicken skin, squid, mackerel, hamburg, and mussels. There is also Kiku-Masamune Kimoto Junmai, a featured cocktail named Highball, and a beer named Sapporo.

Christopher is president of Clark House Hospitality, an organization that owns several restaurants and retail spots in Troy including Troy Wine Company, Donna's Italian, Little Pecks, and Tavern Bar. He previously owned The Bradley, a dive bar that was in Troy before it closed in July 2023.
